Healthy Potato and Chicken Sausage Skillet
My Aldi has been selling ground chicken lately, so I have been on a ground chicken kick! I love it. It’s affordable, healthy, and tastes better than ground turkey. I’ve made cheesy stuffed meatballs, zuppa toscana, and this dish all within the past couple weeks.
I even managed to sneak a few veggies in this dish, and the husband still loved it!!
Potato and Chicken Sausage Skillet

Ingredients (serves 4)
- 1 lb ground chicken breast
- 2 tsp garlic cloves (about 4 cloves)
- 1 Tbsp balsamic vinegar
- 1 tsp paprika
- 1/2 tsp red pepper flakes
- 1 Tbsp Italian seasoning
- 1 can (15 oz) chicken broth
- 3 medium russet potatoes, washed and thinly sliced
- 1/2 bag of frozen multi color pepper strips
Instructions
Place chicken, garlic, balsamic vinegar, paprika, red pepper flakes, and Italian seasoning in a skillet of medium heat. Mix together and fry up chicken.
Wash potatoes and slice very thinly. (I used my food processor for this step.)
Once chicken is cooked, add sliced potatoes and chicken broth. Mix together, and cook for 5 to 10 minutes.
Then add peppers, mix together, and cook for another 5 or 10 minutes until peppers are soft. You can cover or not. I also like to cook until a lot of the broth has boiled away so it's not soupy or watery.
Turn off the heat and enjoy!

Looks great 🙂 I make something similar except I make it with cubed potatoes and strips of chicken and/or beef. Yum! Love the flavor added from the peppers into the meat and potatoes 🙂
